Peanut Butter Pumpkin Bites

Yield: About 20 bite-size squares

Ingredients

  • 1 cup peanut butter

  • ¼ cup pumpkin purée

  • 2–3 tbsp honey

  • 2 tbsp coconut flour

  • 2 tbsp oat flour

Equipment

  • 8 x 8-inch baking dish

  • Parchment paper


Instructions

  1. Line an 8 x 8-inch baking dish with parchment paper.

  2. Add the peanut butter, pumpkin purée, honey, coconut flour, and oat flour to a large bowl or stand mixer.

  3. Mix until well combined and a soft, dough-like consistency forms.

    • If the mixture is too soft or sticky, add a little more coconut or oat flour until it holds its shape.

  4. Press the mixture evenly into the prepared baking dish.

  5. Freeze for 1 hour, or until firm.

  6. Remove from the baking dish and cut into squares.

  7. Store in the refrigerator or freezer until ready to serve.

Storage: Keep refrigerated in an airtight container for up to 5–7 days. For longer storage, freeze for up to 2–3 months.
