French Onion Butter Beans

Ingredients
2-3 tbsp butter
3 large yellow onions, diced
2 cans (15 oz) butter beans, drained (reserve 2-4 tbsp of the liquid, if needed)
1 sprig fresh thyme (or ¼ tsp dried thyme)
½ cup beef bone broth
2 cups Gruyère cheese, shredded
Warm bread, for serving (optional)

Instructions
Melt the butter in a large oven-safe skillet over medium-low heat. Add the diced onions and cook, stirring occasionally, for 30-40 minutes, until deeply golden and caramelized.
Stir in the beef broth and thyme, scraping up any browned bits from the bottom of the pan.
Add the butter beans and simmer for 5 minutes. If using canned beans and the mixture seems dry, stir in 2-4 tablespoons of the reserved bean liquid.
If using fresh thyme, remove the sprig.
Sprinkle the shredded Gruyère evenly over the top.
Place the skillet under the broiler, about 6 inches from the heating element, and broil for 2–5 minutes, or until the cheese is melted, bubbly, and golden brown. Depending on your oven, this may take longer. Watch carefully to prevent burning.
Let cool for 10-15 minutes before serving.
Pair with warm crusty bread and butter for the perfect meal.

For extra flavor, use homemade beef bone broth if you have it
